Cider is unfiltered raw apple juice. Apple juice is filtered and pasteurized for long shelf life. Outside of North America, cider is always alcoholic. Apple cider and hard cider can be sweet, dry, bubbly, and refreshing. Cider was popular in North America because it was easier to cultivate apples in comparison to barley.
