This family-run Canadian company, with roots dating back to 1936, has mastered the art of creating spaces that are warm, welcoming, and beautifully designed. Whether I’m dining at Spencer’s on the Waterfront, enjoying the historic charm of Ancaster Mill or Cambridge Mill, or relaxing at the Elora Mill Hotel & Spa, I always feel a sense of care in every detail—from the locally sourced food to the thoughtful service. Each property feels like its own little world, yet they all carry the same spirit of authenticity and elegance. Pearle doesn’t just offer a meal or a stay—they create moments you want to return to again and again.

Imagine dining in a crystal pavilion, gracefully perched at the edge of a shimmering lake—its glass walls soaring skyward, inviting in the sun, the stars, and the spirit of the water. Outside, just steps away, manicured gardens and cascading waterfalls create a dreamlike backdrop, their gentle rush echoing nature’s poetry in the open air. At Spencer’s at the Waterfront, the boundary between landscape and luxury dissolves, and elegance meets the elements in perfect harmony.

Located within Spencer Smith Park in Burlington, Spencer’s offers one of the most picturesque dining experiences in southern Ontario. Surrounded by gardens, walkways, and flowing fountains, the restaurant stands just steps from Lake Ontario, where sailboats dot the horizon and sunsets feel cinematic.

The magic lies in the atmosphere: glass walls dissolve the barrier between indoors and out, creating an immersive view no matter where you’re seated. Though the waterfalls are outside, their presence is felt—part of the sensory experience as you sip wine and watch the light change over the lake. Inside, everything is sleek yet welcoming, featuring warm wood, contemporary accents, and a sense of openness that invites conversation, connection, and celebration.

A Toast to the Evening

To begin the evening, Debbie chose the White Sangria—a chilled, citrusy blend kissed with peach, apple, and fresh mint. It was light, refreshing, and as playful as a summer breeze. I opted for a glass of red Sangiovese Serprimo, deep and rich with notes of dark cherry and spice—bold, elegant, and perfect for what lay ahead.

With drinks in hand and the lake shimmering beyond the glass, we toasted to her birthday. It already felt like a memory in the making.

First Course: Flavor Meets Artistry

Debbie’s Butternut Squash Soup arrived as a golden pool of comfort, topped with a drizzle of cream and candied walnuts. Velvety, fragrant, and ever-so-slightly sweet.

Alex recommended the Tempura Shrimp, plated like a painting: crisp golden shrimp resting against orange segments and chili glaze, with creamy avocado adding balance. The flavors danced—crunch, heat, citrus, silk—a chorus of contrasts that somehow found perfect harmony.

Main Course: Heartfelt Indulgence

Debbie’s Roast Beef was served with an air of quiet confidence. Perfectly pink slices, slow-roasted and delicately marbled, nestled beside market vegetables and buttery potatoes. Each bite was tender, comforting, and timeless, the kind of dish that speaks softly but leaves a lasting impression.

The Shrimp Pasta, was a sea-kissed melody of flavors. The pasta—al dente ribbons of silk—carried a garlic-laced sauce that clung lovingly to each strand. Succulent shrimp curled in the folds, every bite layered with fresh herbs and a whisper of spice. It was rustic elegance on a plate.

Sweet Simplicity: A Cool, Clean Finish

For dessert, we opted for Vanilla Bean Ice Cream—simple, pure, and exactly what the evening called for. Smooth and cool, it was the gentle landing after a flavor-filled journey. Paired with the lingering views of twilight melting into night, it was more than enough.

Daniel the restaurant manager moves through the dining room with quiet authority and sharp elegance. He is impeccable, compose, intuitive and strikes the perfect balance between professionalism and hospitality. With a keen eye for detail, he ensures we are doing ok like a seasoned maestro. We start talking about hospitality, food and watches. Daniel finds out its is Debbie’s birthday and offers us two glasses of Prosecco.

Daniel runs the front of the house unshakably charismatic and cool. Alex our server was on point.
